Herbs de Provence Potatoes  4 - 6 Servings


5 potatoes
5 sprigs lavender
1 teaspoons dried *culinary lavender buds
2 Tablespoons unsalted butter
1 Tablespoons *Herbs de Provence
5 garlic cloves (minced)
1 ½ teaspoons sea salt
sprinkle of black pepper


Put potatoes and sprigs of lavender in a sauce pan and cover with cold water. Bring to boil over high heat and continue to boil until the potatoes are tender when pierced with a fork but still hold there shape. (10 - 15 minutes) Drain. Some of the lavender buds will cling to the potatoes.

Melt the butter in a large skillet over medium heat. Add garlic and sautee until aromatic, then add potatoes, dried lavender, herbs de provence and salt. Cook and stir occasionally until the potatoes are very hot and the flavors have a chance to meld. (5 to 8 minutes)

You can also brown under the broiler to crisp up.
