Lavender Honey (heat infused) 8oz. serving

Time: 4½ hours
Note: Over heating honey can result in a loss of flavor and the beneficial qualities attributed to honey, becareful not to destroy its natural properties.

Ingredients:
8 ounces honey
4 tablespoons dried *culinary lavender buds

Preparation:
  Heat honey in a double boiler (a bain-marie) until hot but NOT boiling. Add the lavender buds and stir well dispersing the lavender throughout the honey. Continue to heat over a low heat for 30 minutes. Remove from heat, cover with cheese cloth and allow to cool somewhat before placing in the sun for 3 or 4 hours. Pour the honey through a sieve and discard the cooked lavender. Store the honey in a tightly covered jar in a cool dark place.

Time: 3 weeks

Ingredients:
8 ounces honey
¼ cup *culinary lavender buds

Preparation:
Place culinary lavender buds in an 8 ounce glass jar. Pour half the honey over the lavender buds and stir with a wooden stick (the handle of a wooden spoon works well). After you have coated all of the lavender with the honey pour the remainder of the honey into the jar and seal the lid tightly. Periodically turn the jar upside down over the next three weeks to move the lavender buds around and infuse all the honey with its awesome flavor.
